    • 2 TB butter
    Soup
    • 2 oz neutral oil
    • 12 ea garlic cloves, sliced thin
    • 5 ea onions, sliced thin
    • 1 gallon chicken stock
    • ½ C heavy cream

    RECIPE
    1. Preheat oven to 325°F.
    2. Halve the squash and scoop out seeds. In each cavity place a tablespoon of butter, a tablespoon of brown sugar, and a few slices of ginger.
    3. Place squash in a roasting pan, cavity side up. Cover with aluminum foil, and roast until tender, 45 minutes to an hour. Once cooled, scoop the flesh from the skin.
    4. For the soup: Heat oil in a deep pan or pot and sauté the garlic, then add onions and gently cook until translucent. Add chicken stock and sachet of spices and cook for 15 minutes until tender.
    5. Add squash and heavy cream. Bring to a boil. Simmer gently for 15 minutes. Remove sachet and blend until smooth.
    6. Separately, mix ingredients for maple sour cream.
    7. Garnish with maple sour cream. Optional topping:  toasted pumpkin seeds and pumpkin seed oil.

We believe food is medicine and food is love.

We started as a small group of neighbors cooking and delivering meals for each other at the height of the HIV/AIDS epidemic. That spirit of neighbors nourishing neighbors still drives everything that we do today. When you support Open Hand, you're making a real impact on the health of Georgians in need, but you're also showing our neighbors that we care. Will you join us with a gift today?
