  • Happy St. Patrick's Day (and National Nutrition Month)! We feel so lucky to have your support. You're the reason we're able to continue to empower Georgians with the love, dignity, and nutrition they need to thrive.

    Today, we continue to serve our neighbors with the power of food as medicine. In honor of your support, we want to show you the power of food as love. As a thank you, our team of Registered Dietitian Nutritionists wanted to spring into the season with a recipe packed with a rainbow of nutrients and flavor. Enjoy!

    Berry BBQ Glazed Salmon
    4 Servings
    Recipe inspired by Reluctant Entertainer

    Ingredients:
    • 1½ lb salmon
    • 1 cup low-sugar ketchup
    • 2 tbsp apple cider vinegar
    • 2½ tbsp dark brown sugar
    • ½ tbsp black pepper
    • ½ tbsp minced garlic
    • 1 tbsp lemon juice
    • 1 tbsp Worcestershire sauce
    • ½ tsp liquid smoke
    • splash of low-sodium hot sauce (optional)
    • 1 tbsp molasses
    • ½ cup frozen blackberries
    • ½ cup frozen blueberries
    • salt and pepper, to taste
    Tip: You can replace the blackberries/blueberries with strawberries, cherries, or plum! Just adjust the cooking time as needed if the fruit pieces are larger.

    Instructions:
    1. Preheat oven to 400 degrees Fahrenheit.
    2. Heat frozen blackberries and blueberries in a saucepan over medium heat.
    3. Meanwhile, combine all the remaining ingredients, except the salmon, in another saucepan. Add frozen fruit and continue to heat for ten minutes.
    4. Pat dry the salmon and season with salt and pepper.
    5. Spread the sauce over the salmon.
    6. Bake salmon for 25-30 minutes, uncovered.
    7. Enjoy!
